Baked meatballs on a bed of vegetables

For meatballs:
2 cups minced meat
1 onion
2 cloves crushed garlic
1 small grated potato
1 egg
1/2 cup breadcrumbs

For the vegetable bed:
2 lbs potatoes
250 g mushrooms
1 carrot
1 red bell pepper
Green parsley
2 tomatoes
20 g olive oil.

For the sauce:
1/2 cup tomato sauce
2 tbsp water

Step 1: Put the minced meat and the other ingredients in a large bowl.
Step 2: Stir to blend.
Step 3: With wet hands, form round meatballs and place them on a chopping board.
Step 4: Place the diced potatoes, the sliced mushrooms and then the diced carrot in a baking dish
Step 5: Add the formed meatballs.
Step 6: Add the chopped pepper, chopped parsley and tomatoes.
Step 7: Pour the oil all over the tray.
Step 8: Prepare the sauce by mixing the tomato sauce, water and spices to taste.
Step 9: Pour the sauce into the pan and put it in the oven for about 45-50 minutes at 360 F.
