Basque Cheesecake Recipe


  • 2 lbs (900g) cream cheese, at room temperature
  • 1 1/2 cups (300g) granulated sugar
  • 6 large eggs
  • 2 cups (480ml) heavy cream
  • 1 tsp vanilla extract
  • 1/4 cup (30g) all-purpose flour
  • 1/2 tsp salt


  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a 10-inch (25cm) springform pan with parchment paper, making sure the parchment goes up the sides of the pan. This will give the cheesecake its rustic, wrinkled appearance.
  2. Prepare the Cream Cheese Mixture: In a large mixing bowl, beat the cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
  3. Add Sugar: Gradually add the granulated sugar, continuing to beat until fully incorporated and the mixture is smooth.
  4. Add Eggs: Add the eggs one at a time, beating well after each addition to ensure they are fully incorporated.
  5. Add Cream and Vanilla: Reduce the mixer speed to low and slowly pour in the heavy cream, followed by the vanilla extract. Mix until just combined.
  6. Add Flour and Salt: Sift the flour and salt over the mixture and fold in with a spatula until just combined. Be careful not to overmix.
  7. Pour into Pan: Pour the batter into the prepared springform pan.
  8. Bake: Bake in the preheated oven for 50-60 minutes, or until the top is a deep golden brown and the center is still slightly jiggly when you shake the pan. The cheesecake will puff up in the oven and then sink slightly as it cools.
  9. Cool: Remove the cheesecake from the oven and let it cool in the pan to room temperature. Once cool, remove the springform pan and peel away the parchment paper.
  10. Chill (Optional): For a firmer texture, you can refrigerate the cheesecake for a few hours or overnight. However, it can also be enjoyed at room temperature for a creamier texture.
  11. Serve: Slice and serve. This cheesecake is rich and delicious on its own but can also be paired with fresh berries or a drizzle of honey if desired.
