Heavenly Creamy Cinnamon Rice Pudding

Heavenly Creamy Cinnamon Rice Pudding

  • 1 cup Arborio rice (or any short-grain rice)
  • 4 cups whole milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg (optional)
  • 2 tablespoons unsalted butter
  • Ground cinnamon (for garnish)
  • Whipped cream (for serving, optional)

1. Cook the Rice:

  • Rinse the Arborio rice under cold water until the water runs clear.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low. Cover and simmer for 15 minutes, or until the water is absorbed and the rice is tender.

2. Prepare the Pudding Mixture:

  • In a large saucepan, combine the cooked rice, whole milk, heavy cream, granulated sugar, brown sugar, salt, and ground cinnamon. Stir well to combine.
  • Cook over medium heat, stirring frequently to prevent sticking, until the mixture begins to simmer.

3. Simmer the Pudding:

  • Reduce the heat to low and continue to cook the mixture, stirring occasionally, for 25-30 minutes, or until the pudding thickens to your desired consistency. The rice should be very tender and the mixture should be creamy.
  • If the pudding becomes too thick, you can add a bit more milk to reach your desired consistency.

4. Add Flavorings:

  • Once the pudding has thickened, remove it from the heat. Stir in the vanilla extract, ground nutmeg (if using), and unsalted butter until the butter is melted and everything is well combined.

5. Serve:

  • Spoon the warm rice pudding into serving bowls.
  • Garnish with a sprinkle of ground cinnamon and a dollop of whipped cream, if desired.

6. Chill (Optional):

  • If you prefer chilled rice pudding, allow it to cool to room temperature, then refrigerate for at least 2 hours before serving.
