Easy Lemon Coconut Almond Cake Recipe


For the Cake:
  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tbsp freshly squeezed lemon juice
  • 1 tsp lemon zest (optional)


  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the almond flour, all-purpose flour, shredded coconut, baking powder, baking soda, and salt.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
