Chocolate Muffins


For the Muffins:

  • 1 3/4 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk, room temperature
  • 1/2 cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips (plus extra for sprinkling on top)


1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C).
  • Line a 12-cup muffin tin with paper liners or grease the cups with cooking spray.

2. Mix the Dry Ingredients:

  • In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Mix well.

3. Mix the Wet Ingredients:

  • In a medium bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.

4. Combine Wet and Dry Ingredients:

  • Pour the wet ingredients into the dry ingredients and gently fold together with a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy.

5. Add Chocolate Chips:

  • Gently fold in the chocolate chips, ensuring they are evenly distributed throughout the batter.

6. Fill the Muffin Tin:

  • Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle a few extra chocolate chips on top of each muffin.

7. Bake:

  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs attached.

8. Cool:

  • Allow the muffins to cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.
