Mini Cheesecakes

Ingredients:

For the Crust:

  • 1 cup graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 16 ounces (2 packages) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1/4 cup heavy cream

For the Topping (optional):

  • Fresh berries (such as strawberries, blueberries, raspberries)
  • Fruit compote or pie filling
  • Chocolate ganache
  • Whipped cream

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 325°F (163°C).
  • Line a 12-cup muffin pan with cupcake liners.

2. Prepare the Crust:

  • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
  • Divide the mixture evenly among the cupcake liners, pressing firmly into the bottom of each liner to form the crust.

3. Make the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Add the granulated sugar and beat until well combined.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the vanilla extract, sour cream, and heavy cream until the batter is smooth and creamy.

4. Assemble the Mini Cheesecakes:

  • Evenly divide the cheesecake filling among the cupcake liners, filling each about 3/4 full.
  • Tap the muffin pan on the counter a few times to release any air bubbles.

5. Bake:

  • Bake in the preheated oven for 18-20 minutes, or until the centers are set and just slightly jiggly.
  • Remove from the oven and let the cheesecakes cool in the pan for about 30 minutes.
  • Transfer the cheesecakes to the refrigerator and chill for at least 2 hours, or until fully set.

6. Add Toppings (Optional):

  • Once the cheesecakes are chilled and set, remove the cupcake liners.
  • Top with fresh berries, fruit compote, pie filling, chocolate ganache, or a dollop of whipped cream, as desired.
