Ingredients:

For the Ground Pork:

  • 1 lb (450 g) ground pork
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60 ml) tomato sauce
  • 1 tablespoon lime juice

For the Pineapple Salsa:

  • 1 cup fresh pineapple, diced
  • 1/2 small red onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon salt

For Serving:

  • 8 small corn or flour tortillas, warmed
  • 1 avocado, sliced
  • Fresh cilantro leaves
  • Lime wedges

Instructions:

Prepare the Pineapple Salsa:

  1. In a medium bowl, combine the diced pineapple, red onion, red bell pepper, cilantro, jalapeño, lime juice, and salt.
  2. Toss well to combine. Set aside to let the flavors meld while you prepare the pork.

Cook the Ground Pork:

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and cook until softened, about 3-4 minutes.
  3. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the ground pork, breaking it up with a spoon, and cook until browned and fully cooked through, about 7-8 minutes.
  5. Drain any excess fat from the skillet.
  6. Stir in the chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Cook for another 1-2 minutes.
  7. Add the tomato sauce and lime juice, stirring to combine. Cook for an additional 2-3 minutes until the mixture is heated through and well combined.

Assemble the Tacos:

  1. Place a generous spoonful of the ground pork mixture onto each warmed tortilla.
  2. Top with a spoonful of pineapple salsa.
  3. Add avocado slices and garnish with fresh cilantro leaves.
  4. Serve with lime wedges on the side for squeezing over the tacos.

Tips:

  • For extra flavor, you can char the tortillas over a gas flame or in a hot, dry skillet before serving.
  • Feel free to add other toppings like shredded lettuce, cheese, or sour cream if desired.
  • The pineapple salsa can be made a few hours in advance and stored in the refrigerator.
