Blueberry Cheesecake, the entire family is asking for more


Blueberry cake recipe
Ingredients for jam:
10 oz (300 g) blueberries;
1/4 cup (50 g)sugar;
1 tbsp (15 ml )lemon juice.
Ingredients for the base of the cake:
1 cup (200 g )oreo;
⁃ peel of a lemon;
⁃ 1 lemon essence;
1/4 cup (60 g) melted butter.
Ingredients for cream cheese:
1 cup (200g) white chocolate;
10 oz (300g) liquid cream;
1 tsp (5g) gelatin;
20 oz (550g)cream cheese;
1 vanilla essence;
Peel of 2 lemons;
2 tbsp (30g) powdered sugar.

Step 1: If you want to prepare a fresh blueberry jam for this recipe, put 10 oz ( 300g ) of blueberries in a bowl, pour 1/4 cups (50 g) of sugar and 1 tbsp (15 ml) of lemon juice and simmer, stirring occasionally, to 15 min.
Step 2: Crush the biscuits.
Step 3: Melt the butter in a non-stick pan.
Step 4: Melt the white chocolate.
Step 5: Add over the melted chocolate 1/4 cups (60 g) liquid cream and mix the composition.
Step 6: After these intermediate steps, we will prepare the cake.
Step 7: In a bowl, place the crushed biscuits.
Step 8: Add the melted butter, a lemon essence and the peel from a lemon over the biscuits.
Step 9: Mix everything very well.
Step 10: In a cake pan with removable walls and lined with food foil, place the biscuits.
Step 11: Press the cake base and refrigerate the pan until the rest of the recipe is ready.
Step 12: In a deeper bowl, mix the cream cheese.
Step 13: Add powdered sugar, lemon peel and melted white chocolate and mix.
Step 14: Hydrate the gelatin and then dissolve it with 2 tbsp (30 ml) of hot water.
Step 15: Add the gelatin and mix it with a spatula into the cream cheese.
Step 16: Mix liquid cream 8 oz (240ml) in a separate bowl.
Step 17: Incorporate whipped cream, with light movements, in the cheese composition.
Step 18: Remove the cake base from the refrigerator and pour 1/3 of the cheese mixture.
Step 19: Put in place, blueberry jam (half the amount) and with a knife, mix evenly.
Step 20: We will continue with another 1/3 of the cream cheese, then with the remaining blueberry jam and we will mix as we described above.
Step 21: Pour the last 1/3 of the cheese composition, level and put the tray in the fridge overnight.
Step 22: Remove the cake from the pan, garnish with blueberries (about 100-150 g blueberries) or other fruits as desired.
