Whole Orange Cake

Whole Orange Cake

For the Cake:

  • 2 medium oranges (seedless, preferably organic)
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 cup vegetable oil (or melted butter)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Orange Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh orange juice
  • 1 teaspoon orange zest (optional)

1. Prepare the Oranges:

  • Preheat your oven to 350°F (175°C).
  • Grease and flour an 8-inch or 9-inch round cake pan, or line it with parchment paper.
  • Wash the oranges thoroughly. Cut them into quarters (including the peel), remove any seeds, and place the quarters into a food processor or blender.
  • Blend until you have a smooth puree.

2. Make the Cake Batter:

  • In a large mixing bowl, combine the sugar and eggs. Beat with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.
  • Gradually add the vegetable oil (or melted butter) and continue to beat until well combined.
  • Add the orange puree to the egg mixture and mix until combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

3. Bake the Cake:

  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

4. Prepare the Orange Glaze:

  • In a small bowl, whisk together the powdered sugar and fresh orange juice until smooth. If you want a thicker glaze, use less orange juice; for a thinner glaze, use more.
  • Stir in the orange zest if using.

5. Glaze the Cake:

  • Once the cake is completely cooled, place it on a serving plate.
  • Pour the orange glaze over the top of the cake, allowing it to drizzle down the sides.

6. Serve:

  • Slice and serve your Whole Orange Cake.
  • Optional: Garnish with additional orange zest or slices for extra flair.
