Ingredients

For the Oreo Crust
  • 24 Oreo cookies (filling included)
  • 1/4 cup (60g) unsalted butter, melted
For the Strawberry Cheesecake Filling
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup fresh strawberries, pureed
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp all-purpose flour
  • 1 cup coarsely chopped Oreo cookies

For the Strawberry Sauce
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice
  • 1 tbsp water
  • 1 tsp cornstarch

  • Fresh strawberries

Instructions

1. Prepare the Oreo Crust
  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Make the Crust: In a food processor, pulse the Oreo cookies until they are fine crumbs. Combine the crumbs with melted butter and mix until well combined.
  3. Form the Crust: Press the mixture firmly into the bottom of the prepared springform pan. Use the bottom of a glass or measuring cup to pack the crumbs tightly.
  4. Bake: Bake the crust for 8-10 minutes. Remove from the oven and let it cool while you prepare the filling.
2. Make the Strawberry Cheesecake Filling
  1. Cream Cheese Mixture: In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the sugar and beat until combined.
