Ingredients

  • 1 lb fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 tbsp lemon juice
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy whipping cream
  • 2 packages graham crackers
  • 1/2 cup unsalted butter, melted
  • Additional sliced strawberries for garnish

Directions

Prepare Strawberries

  1. In a bowl, combine 1 lb sliced strawberries, 1/2 cup granulated sugar, and 1 tbsp lemon juice.
  2. Let them macerate for about 15 minutes until they release their juices.

Make Cheesecake Filling

  1. In another bowl, beat 16 oz softened cream cheese until smooth and creamy.
  2. Add 1 cup powdered sugar and 1 tsp vanilla extract, and continue to beat until well combined.

Whip Cream

  1. In a separate bowl, whip 2 cups heavy whipping cream until stiff peaks form.
  2. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.

Prepare Graham Cracker Base

  1. In a food processor, pulse 2 packages of graham crackers until fine crumbs.
  2. Add 1/2 cup melted unsalted butter and pulse until the mixture resembles wet sand.

Assemble the Lasagna

  1. In a 9ร—13-inch baking dish, spread a layer of the graham cracker mixture as the base.
  2. Top the graham cracker layer with half of the cheesecake filling, spreading it evenly.
  3. Add a layer of macerated strawberries on top of the cheesecake filling.
  4. Repeat the layers: graham cracker mixture, remaining cheesecake filling, and more sliced strawberries.

Garnish and Chill

  1. Garnish with additional sliced strawberries.
  2. Refrigerate the lasagna for at least 4 hours, or overnight, to allow the flavors to meld.

Serve
