Chocolate Vanilla Cupcakes

For the Chocolate Cupcakes:

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or whole milk)
  • 1/2 cup boiling water

For the Vanilla Frosting:

  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 2-3 tablespoons heavy cream
  • 2 teaspoons vanilla extract
  • A pinch of salt

1. Prepare the Chocolate Cupcakes:

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix on medium speed until well combined.
  • Add the buttermilk and mix until the batter is smooth.
  • Gradually add the boiling water to the batter, mixing on low speed until fully incorporated. The batter will be thin.
  • Pour the batter evenly into the prepared cupcake liners, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the muffin tin for about 10 minutes, then transfer them to a wire rack to cool completely.

2. Prepare the Vanilla Frosting:

  • In a large mixing bowl, beat the softened butter on medium speed until creamy and smooth, about 2-3 minutes.
  • Gradually add the sifted powdered sugar, one cup at a time, beating on low speed until incorporated.
  • Add the heavy cream, vanilla extract, and a pinch of salt. Increase the mixer speed to medium-high and beat for 3-4 minutes until the frosting is light and fluffy.
  • If the frosting is too thick, add more heavy cream, one tablespoon at a time, until the desired consistency is reached.

3. Frost the Cupcakes:

  • Once the cupcakes are completely cooled, use a piping bag fitted with your favorite tip to pipe the vanilla frosting onto the cupcakes.
  • Optionally, decorate with sprinkles, chocolate shavings, or any other desired toppings.

4. Serve:

  • Enjoy your delicious Chocolate Vanilla Cupcakes with friends and family!

These cupcakes are perfect for any occasion, offering a delightful contrast between the rich chocolate base and the creamy vanilla frosting. Enjoy!
